Not much else to say, the shirt says it all. We headed out for a walk and ran into the neighbor kids. Gavin was kind enough to share his Goldfish (miracle); he's working on sharing...but not very good at sharing food. It was a good sharing moment...he even gave her 2!!

The shirt actually has a name tag printed on it that says "Prince Charming"

Roast Pork Tenderloin with Plum BBQ Sauce

Cooking Light

The Plum BBQ Sauce is the secret ingredient. You really can put it on anything...it even made our broccoli taste better. Easy and delicious!!

Sauce:

2 tablespoons canola oil
1 cup chopped onion
2 garlic cloves, finely chopped
1/4 cup packed brown sugar
1/4 cup rice wine vinegar
1/4 cup ketchup
2 tablespoons lower-sodium soy sauce
2 teaspoons dry mustard
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/8 teaspoon crushed red pepper
2 whole cloves
1 1/2 pounds black plums, quartered and pitted
1 star anise

Pork:

2 tablespoons canola oil
2 (1-pound) pork tenderloins, trimmed
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Heat a large saucepan over medium-high heat. Add 2 tablespoons canola oil to pan, and swirl to coat. Add onion and garlic; sauté 5 minutes, stirring constantly. Add sugar and the next 10 ingredients (through star anise); bring to a boil. Reduce heat, and simmer, partially covered, for 30 minutes or until plums break down and sauce thickens, stirring occasionally. Discard cloves and anise.
Preheat oven to 450°.
Heat a large skillet over medium-high heat. Add 2 tablespoons oil to pan; swirl to coat. Sprinkle pork evenly with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Add pork to pan; sauté 7 minutes, turning to brown on all sides.
Transfer pork to a foil-lined jelly-roll pan; coat with 1/2 cup plum sauce. Roast pork at 450° for 15 minutes. Remove pork from oven. Turn pork over; coat with an additional 1/2 cup plum sauce. Roast 10 minutes or until a thermometer inserted in thickest portion of pork registers 155°. Remove from pan; let stand 10 minutes. Slice crosswise. Serve with remaining plum sauce.

2012 Resolutions

It took us all month to figure them out, but here is the Hendricks Family 2012 Resolutions. Hope you came up with some good ones, and you're sticking with them!!

Use all of our vacation days, even if it just means taking a week off at home.
Less work on the weekends; try to limit our work to Mon-Fri.
Potty Training!!! We realized in 2011 this is a family event.
Limit cell phone use in the car; this includes, talking, texting, reading e-mails, all of it...even at read lights. Nothing is that important, and if it is we can pull over. Our precious cargo is far more important than our cell phones.
Barb & Jason date night, at least once a month.
Parents & Kids date breakfast, lunch or other, at least once a month.

Not a ton of resolutions, but if we accomplish all of these in 2012 it will be a very good thing!!

Crash & Burn

A picnic at Queen Creek Olive Mill is always a great time at our house. We took Auntie Sue this time as she has never been. While we were waiting for our food Gavin wanted to go run through the trees. He stepped in a hole and did a number on his face. The pictures don't do it justice. His hands didn't get out in front of him so he had a face full of dirt and rocks. Pour kid. He cried for a minute (if that), then was really concerned about where his goldfish were. He didn't even want to take a break and go wash out his rock/dirt filled mouth.

No one can say we don't play hard at our house! Of course the scab got worse as the days went on. These pictures look pretty good.

Liam Week #4

Another race for Jason. PF Chang's Rock N Roll Arizona 1/2 marathon. Barb took the little ones in the new double stroller and went out to support Daddy. We almost missed him (not as easy getting around the new course, and with 2 little ones), but we made it. Jason had a record breaking time...again.

First Bath

We had a much better experience with Liam's first bath than we did with Gavin's. We had no idea what we were doing with Gavin!! This time we were organized and better prepared for what we needed. Liam seemed to like the bath - no screaming like his brother.

Our blog was started with the intention of having a way to keep family and friends informed and current with our lives (specifically with Gavin). We all get so many e-mails all the time that we didn't think sending out a weekly update e-mail was going to do the trick; plus you always end up forgetting someone.

Well now our bundle of joy #2 has arrived and we've committed to do the same. Everyone says you'll never take the same amount of pictures of you second or third children as you did your first. We're hoping to change that standard at our house. We do love to document our life through photos. Plus we think our kids are adorable (that's our job as parents) so we try to capture every cute moment they have.

These are a few photos of Liam's first week of life. He's now 3 weeks old...and cuter than the first week. We'll update more pictures later in the week.

Another successful recipe from Runner's World magazine. We made this last night for Jason's pre-race dinner. It was so, so, so good. And now Barb has leftovers for the week too. For our non-meat lover friends, you can substitute the chicken for spinach and mushroom...we'll try that one next.

Quick, Creamy Chicken Lasagna

15 lasagna noodles (we used whole wheat), cooked al dente
4 cups shredded cooked chicken
1 1/2 teaspoons dried basil
12 ounces reduced fat cream cheese, softened
1/2 cup chicken or veggie broth
3 cups marinara sauce
4 cups shredded mozzarella cheese
3/4 cup grated parmesan cheese

Adjust oven rack to lower-middle position and heat oven to 400°F. Combine chicken, basil, 8 ounces of cream cheese, and 1/4 cup broth. Mix remaining 4 ounces cream cheese with 1/4 cup broth in a small bowl; set aside. To assemble, spread 1/3 cup marinara on the bottom of baking dish, then assemble 4 layers in the following order: 3 lasagna noodles, 2/3 cup marinara, 1 cup chicken filling, 3/4 cup mozzarella, and 2 tablespoons Parmesan. Top with remaining 3 noodles, the cream cheese-broth mixture, 3/4 cup mozzarella, and 1/4 cup Parmesan. Cover with cooking spray-coated foil and bake until bubbly, about 45 minutes. Leaving lasagna on same rack, turn oven to broil. Remove foil and broil until lasagna is golden brown, 5 minutes. Remove from oven; let sit for 10 minutes. Serves 12.

We couldn’t be happier. He’s adorable, lovable, sweet, and all the things that babies are supposed to be. Gavin is adjusting well and getting more and more ‘into’ Liam each day. He is quite the little helper for mommy. Jason is on sabbatical until mid-January and it has been so, so wonderful to have us all home together as we start our new family. If anyone has any ideas of how we can sustain this lifestyle 24/7 - we’re happy to entertain them.

Jason was the official photographer of the day - he did such a WONDERFUL job taking pictures, being a new dad, and a super, fantastic, supportive husband! Yes he truly is Superman! This is one of my favorite pictures...Liam entering the world!!

Scalloped White Truffled Pommes Anna

Very fancy name, pretty easy recipe. Prep time was more than let's say mashed potatoes - but these were pretty and so yummy. We even had the leftovers for breakfast the next day. Jason made the dish on NYE and it turned out fantastic! Unfortunately dinner on NYE was a little hectic while trying to put 2 little ones to bed, so we didn't get a picture. This picture and recipe is courtesy of Cooking Light magazine.

Ingredients

2 1/2 teaspoons chopped fresh thyme, divided

1 teaspoon kosher salt

1 1/2 tablespoons unsalted butter, melted

Cooking spray

2 1/2 pounds baking potatoes, peeled and cut into 1/8-inch-thick slices

2 1/2 teaspoons white truffle oil, divided

Preparation

1. Preheat oven to 450°.

2. Combine 2 teaspoons thyme and kosher salt in a small bowl.

3. Drizzle butter into a 10-inch cast-iron skillet coated with cooking spray. Arrange a layer of slightly overlapping potato slices in a circular pattern in pan; sprinkle with about 1/2 teaspoon salt mixture and drizzle with 1/2 teaspoon truffle oil. Repeat layers 4 times, ending with truffle oil. Press potato mixture firmly to pack. Cook over medium-high heat for 6 minutes without stirring.

4. Cover with foil, and bake at 450° for 20 minutes on bottom rack in oven.

5. Uncover and bake an additional 20 minutes or until potatoes are tender when pierced with a knife. Loosen edges of potatoes with a spatula or knife. Place a plate upside down on top of pan; invert potatoes onto plate. Sprinkle with remaining 1/2 teaspoon thyme.

The fun begins the day before, assembling toys! Great job to daddy for putting together the trike from Grandma Patti!

Santa brought a drawing easel that quickly turned into a drum set??!!??

Gavin shared Big Mickey with Little Mickey, pretty darn cute.

We made it through 1/3 of his stocking; not too interested. Gavin spent most of Christmas Day just playing and playing and playing. There were well over 3/4 of his presents left at the end of the day.

Seriously...Gavin took this picture - LOVE IT! He watched mommy use the camera, tripod, and timer and insisted on doing it too. Great photo kid, you're a natural.

Legs are a little short, but this bike holds up to 600 lbs (that is not a type-o) so he'll have it for years to come!

The boxes are still more exciting than the present.

The Year of Mickey Mouse

One of Gavin's favorite characters is Mickey. He just loves that mouse!! He got plenty of Mickey Presents to make the year complete. I don't think he has a favorite, he just loves anything Mickey!!

Homemade body pillow from Grandma Beth. The best part about this was the letter "M"; or when Gavin ran to the other end of the pillow he said "W", then ran back again and said "M", and then ran and "W", ran "M", etc. - it went on for several minutes.

First Haircut

In the past we've always done home haircuts; Gavin just didn't' have enough hair to justify going to a shop. We decided it was time to get a real, big boy haircut. As you can see he didn't like the kid-friendly environment of Snip-Its any better than the shower at home. He did, however, like the lollipop at the end (we can buy those and have them on hand for post-shower haircuts).

We went on Christmas Eve and the place was dead. They said the 23rd there was a 2 hour wait so I guess we picked the right time to go. I will give kudos to Snip-Its! Although their prices were insane (we paid more for Gavin's haircut than we do for Jason's), they are totally kid friendly and have a very nice staff. They make note of how they cut your child's hair so you don't have to remember the next time you are there. They have movies for kids to watch, and toys to play with, and even a treat ticket you can use to get a treat when you're all done with your haircut. Seen how it was his first salon type haircut they gave us all the goodies to go with it as well (lock of hair, certificate, etc.). Thanks Snip-Its for doing your best to make this a positive experience.

Apple-Cinnamon Bundt Cake

Cooking Light October 2011

We decided to try a new recipe for Christmas Day; it was SO worth it. As far as cakes go I would say this was fairly labor intensive. Took a while to get all the pieces moving - but the end result was delicious. Another bonus is it could be made a day ahead of time. It was just as moist and delicious as if it had just come out of the oven. One thing we liked best was that it wasn't too too sweet. After a large Christmas dinner who wants a big, sweet, filling dessert. This went great with a cup of tea/coffee. Can't wait to eat more later in the week.

Ingredients

Filling:

1 1/2 cups diced peeled Granny Smith or other tart apple
1/2 cup apple cider
1 tablespoon dark brown sugar
1 (3-inch) cinnamon stick

Streusel:

1/2 cup walnuts
2 tablespoons dark brown sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon

Cake:

Baking spray with flour
3/4 cup granulated sugar
1/2 cup butter, softened
2 large eggs
1 large egg yolk
1 vanilla bean, split lengthwise
9 ounces all-purpose flour (about 2 cups)
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup fat-free milk
3/4 cup plain 2% reduced-fat Greek yogurt
1 teaspoon powdered sugar

The Labor Begins

Preheat oven to 350°.

To prepare filling, combine first 4 ingredients in a saucepan over medium-high heat; bring to a boil. Reduce heat to medium; simmer 20 minutes or until liquid almost evaporates and apple is tender, stirring occasionally. Cool to room temperature. Discard cinnamon stick.

To prepare streusel, combine walnuts and next 3 ingredients (through ground cinnamon) in a food processor. Pulse until mixture resembles coarse meal.

To prepare cake, coat a 12-cup bundt pan with baking spray. Place sugar and butter in a large bowl; beat with a mixer at medium speed until light and fluffy (about 3 minutes). Add eggs and egg yolk, 1 at a time, beating well after each addition. Scrape seeds from vanilla bean; add seeds to sugar mixture. Reserve bean for another use. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, and salt in a bowl, stirring well with a whisk. Combine milk and yogurt in a small bowl, stirring until smooth. Add flour mixture and milk mixture alternately to sugar mixture, beginning and ending with flour mixture; beat just until combined.

Spoon one-third of batter into prepared pan; sprinkle batter with half apple mixture and half walnut mixture. Repeat layers, ending with remaining third of batter; smooth with a spatula. Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out with moist crumbs clinging. Cool on a wire rack for 15 minutes; remove cake from pan. Cool on a wire rack. Sprinkle with powdered sugar.

Ultimate test - even Gavin ate it and loved it (the non-bread of any kind eater)

Santa Clause Is Coming To Town!!

in the meantime we went to visit him at Bass Pro Shops.

Yes, it is random, but we got the tip from our fabulous friend and neighbor Renee. Guaranteed the smoothest Santa visit we've ever participated in! The store opens at 9:00 am and Santa arrives at 10:00 am. We goT there at 9:30 and were the 3rd people in line. Having a few adults (Grandma Beth, Jason, and Barb) to hold the place in line was perfect. Once Santa arrived we were in and out in less than 5 minutes.

They have SO many things for kids to do other than stand in line; excellent idea!! The boys played with race cars for the first 20 minutes and had a great time (not sure who enjoyed it more Jason or Gavin).

In preparation for our move to colder weather, Gavin got in the spirit. We weren't really sure what the deal was with the fake snow, but he LOVED it. He turned and said "Mommy, can I lay in it?"

Whatever makes you happy Gavin! I mean really, doesn't he look thrilled to be laying in fake snow? Goofball.

He also asked if he could give Santa a kiss - so sweet! Jason said that was a little weird, but Barb thought it was adorable. Much better than the crying 2 year old deathly afraid of Santa that we could have had on our hands.

In addition to a letter writing station to Santa, race cars, a snowball throwing cage, a shooting range, a train track...they also had a Merry-go-round. Every time we came around he said "Daddy look at me!"

And then the perfect pose! What a great kid and what a great picture.

Now if you're not a fisherman, hunter, or outdoorsman of any type - don't count out Bass Pro Shops. All of this wonderful Santa's Workshop magic was 100% FREE. What a nice treat compared to the typical mall. Thank you Bass Pro Shops for making our Santa experience OUTSTANDING!!

Here We Come A Wassailing

Do you know what wassailing is? Wassailing refers to signing carols door to door wishing good health. Can you think of a better way to spread Christmas cheer?

It all started last year when the Hendricks showed up on the doorstep of the Links and sang a Christmas Carol. Samara loved how it made her feel and said we should do it for real next year. A plan was made.

We sent an e-vite with hopes to get a crowd big enough to not notice the poor singers in the group; our RSVP list was slowly dwindling. We did however have one taker (YEAH)! The Fehling family joined our group and it was simply perfect!

We started at 4:30 with homemade individual pizzas. Fun and yum!

The plan was a PJ Caroling party. Gavin sporting his new PJ's made with love by Grandma.

It was so great to have a playmate for Gavin; the boys played while we ate and practiced Christmas carols.

And we headed out! Kids in the wagon, caroling music in hand, candy canes to hand out for a little extra treat.

We quickly found that choosing the right day and right time can make or break your caroling experience. We thought a Sunday evening would be perfect, but we found more houses empty than full. The houses that did have people at it loved the caroling and you could tell we really did spread Christmas cheer; it made us feel good as well as the recipients of the carols.

Should you decide to make this a tradition at your house here are a couple of tips we think are great:

Start with snacks or dinner to get everyone together and practice a few songs
Provide the lyrics (thanks Sam!) - you think you know the words, but when you are standing in front of a strangers door it's amazing how quickly you forget.
Sing 1 carol followed by the chorus of We Wish You A Merry Christmas-it's a great way to leave the family you just caroled to. Decide before you get to the door how much of the 1 carol you are going to sing - some are very long.
If possible, plan a neighborhood that seems to already have a lot of cheer. Our plan next year is to hit a street and/or neighborhood where all of the neighbors decorate - and decorate a lot! You are guaranteed a happy audience with all that Christmas spirit!
Follow the evening up with dessert and hot cocoa at someone's house.

We all had a great time! We are for sure going to keep this a family tradition and will learn new tricks and tips each year to make it even more fun. Hope we've inspired you to do some wassailing of your own!!

Butternut Squash Lasagna

Great dish for making ahead: holidays, guests, arrival of a baby :)

You can prepare and cook it, then all you have to do is heat it up, thank you Giada!

Ingredients

1 tablespoon olive oil
1 (1 1/2 to 2-pound) butternut squash, peeled, seeded, and cut into 1-inch cubes

We purchase already cut, cubed, and ready to cook at Costco or Whole Foods

Salt and freshly ground black pepper
1/2 cup water
3 amaretti cookies, crumbled

Also known as Amaretto Cookies, not easy to find - call your grocery store first before driving all around town (like we did)

1/4 cup butter
1/4 cup all-purpose flour
3 1/2 cups whole milk

We used 2% to cut down on a little of the fat

Pinch nutmeg
3/4 cup (lightly packed) fresh basil leaves
12 no-boil lasagna noodles
2 1/2 cups shredded whole-milk mozzarella cheese
1/3 cup grated Parmesan

Another Successful 60

We did it!

OK, so we do it every year, but this year we were 8+ months pregnant. Jason walked all 60 miles, and Barb did pretty darn close. A few sweep vans and a few extra stretching breaks, she managed to finish 50 of the 60 miles...not to shabby.

Cold morning start. Our designated driver Samara took us all over Phoenix dropping off cars, and dropping of us to make this work. She has been our very early driver a couple years now - we couldn't do it without her!

Rain??? At the AZ 3 day walk??? What???

Yep! At least we weren't too hot.

Our #1 Fan - one of the main reasons we walk!! Thanks Little G for coming to cheer mom and dad on at the finish line (and thanks Grandma Patti for bringing him!!)

New Big Boy Bed

The Wednesday before Thanksgiving we introduced Gavin to his new bed. He actually was home when it was delivered and assembled. WOW, he was so excited. He really loved watching the workers put it together and kept asking "can I get on it". We quickly put the bedding on and got ready for night night. We never would have imagined the transition would have gone so easy.

He's slept in it every night since then, and only one night came to our room (he had a bad fever, so needed to be with mom and dad)

He picks 3 books every night to read and someone climbs in bed with him to read. If mom and dad are both home he often requests both of us.

Luckily we ordered a bunkbed, but full size mattresses, so there is plenty of room for Gavin, mom, dad, Mickey, Boo Boo Ducky, and all his blankets (he has 5).

We added the extra security railing because Gavin hasn't quite figured out how normal people sleep in a bed. His first night we crept in to take a photo - here he is upside down, no pillow, and no comforter. He's making progress over the last few weeks and usually stays up towards the top of the bed.

Gruyere-Stuffed French Toast

Great meal for "Breakfast for Dinner"

We had it for breakfast, but it's very savory and would make a great change to the normal dinner routine.

Don't be intimidated; the ingredients and instructions look complicated - they aren't. The most time consuming part is the Warm Apple Maple Syrup, but it's really easy!

Ingredients

1/4 cup apple cider

1 teaspoon cornstarch

2 teaspoons butter

2 tablespoons finely chopped shallots

2 cups sliced McIntosh apples

1/4 cup maple syrup

6 (2-ounce) slices ciabatta bread

3 ounces Gruyère cheese, cut into thin slices

1/2 cup fat-free milk

1/3 cup low-fat buttermilk

1/4 teaspoon salt

1/8 teaspoon ground nutmeg

1/8 teaspoon freshly ground black pepper

1 large egg

1 large egg white

4 teaspoons butter, divided

3 tablespoons chopped pecans, toasted

Preparation

1. Combine cider and cornstarch in a small bowl, stirring with a whisk. Melt 2 teaspoons butter in a large nonstick skillet over medium heat. Add shallots to pan; cook 1 minute, stirring frequently. Add the cider mixture, apples, and syrup to pan. Bring to a boil, stirring frequently. Reduce heat to low; cook 3 minutes or until apples begin to soften, stirring occasionally. Set aside, and keep warm.

2. Cut a horizontal slit through bottom crust of each bread slice to form a pocket; stuff 1/2 ounce cheese evenly into each pocket. Combine fat-free milk, buttermilk, and next 5 ingredients (through egg white) in a shallow dish, stirring well with a whisk. Working with 1 stuffed bread slice at a time, place bread slice into milk mixture, turning gently to coat both sides.

3. Heat a large nonstick skillet over medium-high heat. Melt 2 teaspoons butter in pan. Add 3 coated bread slices to pan, and cook for 2 minutes on each side or until lightly browned. Repeat procedure with remaining 2 teaspoons butter and remaining 3 coated bread slices.

4. Place 1 French toast slice onto each of 6 plates; top each serving with about 3 tablespoons sauce and 1 1/2 teaspoons pecans.

Fall-Apart Pork Roast with Mole

One of our Slow Cooker favorites

2/3 cup whole almonds

2/3 cup raisins

3 Tbsp Olive Oil, divided

1/2 cup chopped onion

4 garlic cloves

2 3/4 lb lean boneless pork shoulder roast, well trimmed

1 can (14.5 oz) fire-roasted tomatoes or diced tomatoes, undrained

1 cup cubed bread, any variety

1/2 cup chicken broth

2 oz Mexican chocolate (chopped) [found in the International isle at your grocery store]

2 Tbsp chipotle peppers in adobo sauce, chopped

1 tsp salt

1) Heat large skillet over medium-high heat until hot. Add almonds and toast 3-4 minutes, stirring frequently, until fragrant. Add raisins. Cook 1-2 minutes longer, siring constantly, until raisins begin to plump. Place 1/2 of almond mixture in large mixing bowl; reserve remaining for garnish

2) In same skillet, heat 1 Tbsp oil. Add onions and garlic. Cook and stir 2-3 minutes until softened. Add to almond mixture in mixing bowl; set aside.

3) Heat remaining oil in same skillet. Add pork roast and brown on all sides, about 5-7 minutes. Transfer to 4 1/2 qt slow cooker.

4) Combine tomatoes with joyce, bread, broth, chocolate, chipotle peppers and salt with almond mixture. Puree mixture in blender or food processor. Possibly need to do 2 to 3 batches until smooth.

5) Pour puree over pork roast in slow cooker.

6) Cover; cook on low 7-8 hours or on high 3-4 hours. Remove pork roast from slow cooker. Whisk sauce until smooth before spooning over pork roast. Garnish with reserved almond mixture.

Great dish with rice. A little spicy, but we love spice. If you don't love spice then omit the Chipotle peppers.

Halloween 2011

The REAL costume has arrived. Superman (with his supporting actors, Clark Kent, Lois Lane, and possibly a future Wonder Woman or Batman?)

Couldn't leave the house without his drumsticks. When you can't find both drumsticks you improvise: sold him on a spoon!

Superman's current favorite snack = Goldfish

You would think we practiced these poses? No, he just does this crazy stuff all on his own.

He rolled around in the driveway hopping, bouncing, running and became a filthy mess - LOVE IT!

Not sure what the symbolism of his trick or treat bucket on his head means, but I'm sure he'll explain it to us one day. The bucket is empty minus the 2 pieces in his hand BECAUSE each time a kid came to our house he gave them his candy, so sweet!

Some family members participated reluctantly; when the evening was over we all agreed it was fun and the costumes were a success.

In true Halloween tradition, Barb did NOT have costumes ready prior to the 31st. So when the opportunity came up for Halloween parties we had to come up with an interim costume. The idea all started with one, small, innocent, cowboy hat, dropped off in a donation box. Who knew it would be such a favorite by the little man. Until the 31st, we used the Cowboy costume and it worked fantastic!

We, the parents, had NOTHING to do with this...poser did it all on his own (however I think it just might make a future high school yearbook, wedding slide show, something...right?). This evening is what gave inspiration for the costume parties to follow...

Vertuccio Farms

Fall Festival at Vertuccio Farms proved to be everything we hoped it would be. Although it was a little warm for a fall day; Gavin had fun just the same. We went mid-October, but the temperatures were still in the 90's. We also did not expect it to be so buys - tons of families out enjoying fall festivities. We actually went back recently to pick up some things from the farmer's market. The weather was much cooler and the crowds smaller - next year we'll remember November vs. October.

No intimidation whatsoever when it comes to a crowded bounce house; fall down and get right back up again.

Anniversary #4

A weekend getaway is a must for any relationship; especially important to remember after you add children to the family scene.

With the help of Grandma Patti we were able to get away to one of our favorite resorts. JW Marriott Starr Pass in Tucson is a little slice of heaven for us. It's even more relaxing when you're kidless. We started the weekend with spa treatments: hot stone massage for Jason and a prenatal massage for Barb.

Several hours spent relaxing by the pool working on our tans (HA, now that summer is over). One of the great things about Arizona. Also, so much more relaxing when you're kid-less.

Our first night dinner was divine! We went to Hacienda Del Sol restaurant and dined at The Grill. Wow, talk about awesome! Jason did all the research and this place was the perfect setting for a special occasion dinner. They left no detail undone. The staff greeted us by name and congratulated us on our anniversary and the upcoming baby. Dinner was so good we thought for one minute "we could come here again tomorrow". And then just when we thought the evening was over out comes this beautiful, thoughtful, and of course delicious dessert.

Our last night we went to Tavolino for an Italian dinner. The food was good and the atmosphere was ok; it was really hard to beat the dinner the night before. The service didn't come even close to Hacienda Del Sol. Of course we still enjoyed ourselves and our meal.

*Note to self (and others)*

Weekend getaways are a must!! - or even a simple date night, day out together, etc. Don't let kids, work, life get in the way of taking time for each other.

**Fast and easy**

SWEET AND SOUR CHICKEN

(courtesy of Food Network Magazine)

The ingredients look complicated, but really this is an easy recipe and a great way to use up some veggies you may have taking up space in the fridge.

2 tablespoons honey

1 teaspoon chili-garlic sauce

2 tablespoons rice wine vinegar

1 tablespoon reduced-sodium soy sauce

1 teaspoon finely grated fresh ginger

1/4 cup fresh orange juice

2 teaspoons cornstarch

4 teaspoons peanut oil

12 ounces boneless, skinless chicken breast halves, cut into 1-inch pieces

Salt and freshly ground black pepper

1 pint small, sweet mixed peppers, quartered, or 2 mixed bell peppers, cut into 1-inch strips

6 scallions, whites cut into 1 1/2-inch pieces, greens cut into 1-inch pieces and thinly sliced vertically into thin strips

8 ounces snow peas, trimmed

Serving suggestion, cooked brown rice

Chopped peanuts for sprinkling, optional

In a small bowl, whisk together the honey, chili-garlic sauce, vinegar, soy sauce, orange juice and cornstarch; set aside.

Meanwhile, coat the chicken with 2 teaspoons oil and heat large nonstick skillet over medium-high heat. Season the chicken to taste with salt and pepper and cook, turning occasionally with a wooden spoon, 2 minutes. Transfer the partially-cooked chicken to a plate. Reserve the pan.

Heat the remaining 2 teaspoons oil in the pan; add the peppers, scallion whites, and snow peas. Cook, stirring occasionally, until the vegetables are crisp-tender, about 3 minutes. Stir in the reserved chicken; whisk the sauce again and add it to the pan. Simmer, stirring occasionally, until the sauce is thickened and the chicken is tender, 1 to 2 minutes. Serve over rice and sprinkle with the scallion greens and peanuts, if using.

Not Your Average Joe's 10K

Yep, that was the name of the race. We were looking for a local race to get out and enjoy the cool weather. This one was right around the corner from our house, looked like it was a great cause, and it was a 10K - perfect! Maybe not....Joe Gibson's Memorial Foundation is a great cause, however it was hot, hot, hot. Jason and Barb participated in the 10K and Gavin did the kid's obstacle course. Although it was a hot fall day, we still had a great time.

Yes she would kill us if we posted her age, but her daughter turned 60 this year and this was a special birthday, so you might be able to figure it out. We traveled to Orange County for a weekend full of family, friends, and fun. Cousin Cole also got married that weekend (but we forgot the camera at the wedding). We celebrated Gram's bday at a Mexican food restaurant and she was SO surprised!

A twist on Rocco Disporito's Lightened Fettuccine Alfredo.

CHICKEN AND MUSHROOM FETTUCCINE ALFREDO

8 oz. whole wheat fettuccine (regular if you can't find whole wheat is fine)

1 tbsp olive oil

3 garlic cloves, minced

2 tsp cornstarch

Pinch ground nutmeg

1 package sliced mushrooms

2 chicken breasts, cooked and diced

3/4 cup low-fat, low-sodium chicken broth

3/4 cup grated Parmigiano-Reggiano cheese

3/4 cup 0% Greek yogurt

Salt and freshly ground black pepper

1) Bring large pot of salted water to boil. Add fettuccine and cook according to package directions, usually 9 to 11 minutes gives it the perfect doneness; drain.

2) While pasta is cooking, put olive oil in large sate pan over medium heat. Add garlic and cook until fragrant, about 2 minutes.
3) Meanwhile, combine cornstarch and nutmeg in a small bowl. Whisk in chicken broth until smooth.

4) Pour mixture into sauté pan, raise heat, and bring sauce to simmer, whisking occasionally.

5) While sauce is simmering sauté mushrooms, drain excess water.

6) Whisk in 1/2 cheese until melted. REMOVE FROM HEAT.

7) Whisk in yogurt until sauce is smooth. Mmmm, looks sinful doesn't it!

8) Add cooked chicken and mushrooms (or other ingredients like broccoli) and toss with pasta noodles.

9) Top pasta with remaining 1/4 cheese and serve. Makes 4 (small) servings.

Bon appetite! This dish is so so so good this is the 2nd time we've posted it on the blog. We actually made this recently and did it 2 weekends in a row, not to mention at a family members' house while out of town. It is, if not as good, better than any high fat, high sodium dish you would get at a top Italian restaurant. CHALLENGE - try it! You'll like it.

Another tip - we double the recipe, it seems easier with the amount of ingredients and we love the leftovers. A box of pasta is 16 oz, a small container of Fage greek yogurt is 1 1/2 cups, etc. Seriously even the leftovers taste like you just made it fresh. As a matter of fact, I think this just might make the menu again this week - I'm hungry :)

It was small, but fun. It's a good thing we planned small because any more friends and he would have been overwhelmed. As it was he has a short breakdown when Marcus started playing with his Legos. Hmmm, guess we're going to have to work on that sharing thing when baby #2 comes around. We had the Keane Family, Grandma & Grandpa Hendricks, Joy's son Matt & his family, Grandma Patti, and of course mom & dad all here for the party.

Every woman loves getting photographed...especially when it's progress of how much fatter she's getting. Seriously though, this is the only time getting bigger is better. And it's fun to document the progress. At 27 weeks the baby was estimated to be 2.7 lbs (an average 27 week old is 2 lbs). Doesn't seem like much of a difference, but at this rate we're putting our money on another big baby! Grow belly grow - healthy is all we care about!

Doctor wanted us to go in for another ultrasound to check out baby's heart. The first ultrasound baby was moving too much to get some good photos and confirm blood flow. It was fun for us because of course the technician snuck in a few face shots too.

Final Pig Roast 2011

The Thew Family had their final pig roast this year. It was a success as usual. Many people asked why is this the last year...all good things must come to an end. It will be missed, but we'll have other reasons for family and friends to get tighter - and I'm sure some of them will be at the river. Gavin had a great time on his sort of 'camping' trip. The highlight was the river and swimming of course.

Those that were there will remember the morning of the pig and Russell. We won't bore you with the details, other than to say it's a really good thing there were a lot of people who have been to the pig roast before and knew what needed to be done to get that piggy in the ground.

Baby #2 Ultrasound

We are well into the pregnancy now, 6 months down only 4 to go. These ultrasound pictures were taking at exactly 1/2 way through (20 weeks). The results were great! The baby weighed just under 1 pound in these photos, crazy how tiny it is. Although the baby was tiny, the doctor still said the baby is "biggish". Oh boy! The Hendricks blood line sure knows how to have BIG babies! If you can't make out the photos, don't feel bad - until I became a mom I could never figure these things out either.

The Hendricks house has pizza almost every week. Sometimes we order it, but our favorite thing to do it make it at home. Pizza can be healthy believe it or not. Here are a few tips we've found to keep our pizza healthy AND delicious!

Anytime you can use fresh ingredients, it's always that much better for flavor. This is our CRAZY basil plant that has taken over our herb garden. It was so delicious on the pizza (we've been making a lot of homemade pesto too).

Pizza crust dough from Sprouts. If you don't have a Sprouts, try Whole Foods, or Trader Joe's. These places often have whole wheat dough, and if you use dough rather than a pre made crust you can roll it out thin to give yourself 'thin crust'.

The pan can make or break your homemade pizza experience. This tip was given to me a couple years ago, and it's the greatest pizza pan alive. We've recommended it to several friends and they too would agree. It's $21.00 from Williams Sonoma and worth every penny!

The more veggies the healthier your pizza. But don't forget the flavor!

We started with a light layer of Garlic Olive Oil (no sauce), mmm so much flavor. Where do you get Garlic Olive Oil you ask? Why the Queen Creek Olive Mill of course, and yes you can buy on-line! Then come the ingredients, this week we did: prosciutto, mushrooms, basil, and black olives.

Another great 'keep it healthy' tip is the cheese. Less is more. This is the most fattening part of the pizza, but also the most delicious. If you buy a stronger flavored cheese it won't require you to put as much on. We used Asiago Cheese and placed small slices all over so each piece would have some cheese. It was delicious! Last tip, cut the pizza in squares rather than triangles like a pie. The pieces end up being smaller, and just as filling, you can have 3-4 pieces and feel like you had a lot of pizza.

Seattle Rock n' Roll

One of our favorite getaways - SEATTLE! We both ran in the Rock N Roll 1/2 marathon in June. It was a nice long weekend with lots of 'touristy' stuff as Grandma Patti came with us this time and she had never been to Seattle.

So freezing cold waiting for the race. It was perfect race weather, but the standing around waiting for the race to start was awful. Jason had his best time ever! Barb came in under 2 hours, not bad for 4 months pregnant. We both were very pleased with our races.

Gavin loved, loved, loved the Space Needle. Every time we were outside he asked about it. He wasn't as into it when we went up in it; he's rather be viewing it from a far so we can actually see The Needle.

Cousin Grant hosted a BBQ and had the whole family over. Great Grandma Jane was so happy to be able to spend time with Gavin.

Enjoying some Birthday Gifts

It may be 112 degrees outside, but that doesn't stop kids! We've found a few minutes in the morning before the sun hits the backyard that Gavin has been able to enjoy his new slide from Nana Diane. Just love the picture with his tongue sticking out - apparently sliding takes a lot of concentration. He loves to take his baseball and roll it down the slide too.

Looking forward to Fall (probably late Fall) when we can be outside all the time with his new toys.

Woods Canyon Lake Camp Out

We finally took time out of our crazy schedules for a camping trip. We've owned the extremely cool REI tent for 5 years, and yes this is the first time it saw dirt! Our neighborhood put together a group campout and it was so much fun. 15 families with a campground all to ourselves. They had all kinds of fun 'camp' activities for us, or we could do our own thing. We did a little of both.

A view from just around the corner from our campsite. I think deep down inside the thing we loved the most was that our cell phones didn't work at the campground!

Day #1 a 3 mile walk down the trail to the lake. Gavin slept in his own sleeping bag on his own mattress right next to mom & dad. Woke up crying once because he had semi rolled off the bed, his head was on the floor (you'd be crying too).

There isn't any swimming at Woods Canyon Lake so we drove about 4 miles up the road to Willow Spring Lake for a dip in the lake. We waded in the chilly water or a bit, then Gavin decided it was time to jump in. Jason went first with Gavin anxiously awaiting his turn. He loves, loves, loves jumping off docks into water. NO FEAR!

Seville set up an "Adventure Race" for all families to participate in if they wanted. You had to have teams of 3 so we were coerced into participating. We are so glad we did, we had so much fun. Gavin loved it! The hula hoops were probably his favorite. He continued to run through them long after the race was over.

Snug as a bug in his sleeping bag. We had a very loud and wet thunder/rain storm on Saturday afternoon. Gavin slept through the entire thing, didn't move a muscle. Must be a comfy mattress.

We love blogging and keeping our family and friends in touch. If you read our blog regularly you'll notice we haven't put many posts up this summer. It's not for a lack of material. We've been so busy and on the road so much there just hasn't been time to catch up.

I promise to get all of our summer activities up on the blog with pictures and stories of the wonderful memories we've made this summer. At this point I'm going to start current and work my way backwards as I have time to 'catch up.'

Summer Vacation

Believe it or not we went to Paris for our vacation this summer. Cousin/Uncle Ryan got married to his beautiful bride Mandi - and Gavin was 1 of 2 ring bearers. Here are some photos of the wonderful memories we made. Congrats to Ryan and Mandi and thanks to both of them for letting us share in their very special day!

Gavin's playhouse, that is what he called our business class seats on the way to Paris. We flew British Airways.

There was a gas spill (a little scary) and we had to leave the plane. Luckily they had a nice lounge for us to hang out in. Gavin entertained the upset passengers and did a great job taking their mind off the fact that we departed 2 hours later than expected.

A picture with all 3 of us is about as good as we can get; all 3 looking at the camera - now that would be a miracle. Thanks to Barb's mom for making the dress, it was perfect for the little belly.

Jason took a day trip with Auntie, Uncle, Gram, and Cole to Normandy.

On the flight home we were in First Class. No Gavin didn't have his own seat, he just took over Barb's seat. A regular frequent flyer. Now whenever we board a plane he asks where the TV is.

Kicked Barb out of her seat completely, but who could resist this adorable little guy.

Took us about 2 weeks to get back to the routine and the AZ time zone. It was a great trip and we once again have memories to last a lifetime.

Baked Ziti and Summer Veggies by Cooking Light Magazine

with Tomato & Cucumber Salad

4 ounces uncooked ziti
1 tablespoon olive oil
2 cups chopped yellow squash
1 cup chopped zucchini
1/2 cup chopped onion
2 cups chopped tomato
2 garlic cloves, minced
1 cup (4 ounces) shredded part-skim mozzarella cheese, divided
2 tablespoons chopped fresh basil
2 teaspoons chopped fresh oregano
3/4 teaspoon salt, divided
1/8 teaspoon crushed red pepper
1/4 cup (2 ounces) part-skim ricotta cheese
1 large egg, lightly beaten
Cooking spray

1. Cook pasta according to package directions, omitting salt and fat; drain.
2. Preheat oven to 400°.
3. Heat a large skillet over medium-high heat. Add oil to pan. Add squash, zucchini, and onion; sauté 5 minutes. Add tomato and garlic; sauté 3 minutes. Remove from heat; stir in pasta, 1/2 cup mozzarella, herbs, 1/2 teaspoon salt, and pepper.
4. Combine ricotta, remaining salt, and egg. Stir into pasta mixture. Spoon into an 8-inch square glass or ceramic baking dish coated with cooking spray; sprinkle with remaining mozzarella. Bake at 400° for 15 minutes or until bubbly and browned.

Chopped up fresh cherry tomatoes and peeled cucumber. Added lemon olive oil and white balsamic vinegar from Queen Creek Olive Mill, a dash of salt and pepper. So refreshing on a hot summer day!

Paris Vacation Preparation

This week we are in Paris...yes France...for a wedding where Master Gavin Hendricks is going to be a ring bearer. We had to make some alterations to the tux, but he looked so cute in it. He didn't seem to mind all the layers either. When we return from our royal vacation we'll have a lot more pictures of the wedding and France.

This recipe was so delicious! I was disappointed that I didn't take pictures, but trust me it's worth trying. I'll steal a photo from Chloe, who we got the recipe from. We love it because it really tastes rich, creamy, and delicious - like a typical unhealthy pasta dish...BUT IT'S HEALTHY! Love it!! I should mention it's SUPER easy, takes only the time to cook the noodles to make. Every mom's dream - easy & delicious :)

Avocado Pesto Pasta

1 lb dried linguini

1 bunch basil leaves (about 2 1/2 ounces)

1/2 cup pine nuts (we used walnuts because we didn't have pine nuts on hand)

2 ripe avocados, pitted and peeled

2 Tbsp fresh lemon juice

3 garlic cloves

1/2 c. olive oil (we were able to get by with only 1/4 c.)

1/4 c. chopped sun dried tomatoes

Salt & Pepper to taste

1. In a large pot, bring water to boil. Add pasta and cook according to package. While pasta cooks, in a food processor blend basil, nuts, avocados, lemon juice, garlic, and olive oil. Season with salt & pepper.

2.) Drain pasta. In large serving bowl combine pasta, pesto, and sun dried tomatoes.

We made it for dinner one night and liked it so much I made it again for our vegetarian friend Samara the next day for lunch.

Gavin is one lucky little boy, he has several great grandma's. He got to spend an entire week with Great Grandma Blanche a couple weeks ago. Gavin's daycare was closed for vacation and we needed a babysitter, she kindly offered. They had such a great time together. Singing, dancing, laughing, playing baseball - and of course the pool & popcorn...a daily favorite.

Asparagus and Mushroom Rigatoni

5 tablespoons extra virgin olive oil, divided
5 cloves garlic, thinly sliced
2 pkgs crimini mushrooms, stemmed and sliced
1 pound asparagus, cut into 1-inch spears
1 pound rigatoni pasta
2 tablespoons fresh parsley, chopped
2 tablespoons lemon zest
1/4 cup parmigiano reggiano, grated
Salt and pepper to taste

In a large pot, boil six quarts salted water.

Heat three tablespoons of oil in a large saucepan over medium-high. Add garlic. When it turns gold, add mushrooms. Season with salt and pepper. Saute mushrooms until darkened, about five minutes. Add asparagus and toss gently to coat, sauteing a few minutes more.

Add pasta to boiling water and cook 10 minutes.

Turn heat under the saucepan to high and add a cup of pasta water. Cook until water reduces by half, about thirty seconds. Lift pasta from water with slotted spoon and add it to the skillet. Toss over high heat for one minute.

Turn off heat and toss with parsley, lemon zest, and cheese. Drizzle with remaining olive oil. Serves six.

Ice Cream Cake

(minus the cake)

You will need 3 containers of ice cream, any kind. We did 3 different kinds to get a variety. You will also need one package of Oreo cookies.

Let the ice cream get soft enough you can scoop it out into a saran wrap lined round cake pan. It doesn't have to be completely melted; it actually melts better once it is in the cake pan. The saran wrap will come in VERY handy later so don't forget that step.

As the ice cream continues to melt more, smooth out the top with a spatula.

Oreo cookies come 3 rows to a package. Take one row and place in a ziploc bag. Seal, then roll with a rolling pin until cookies turn to crumbs. Top the ice cream with the crumbs.

Place each pan in the freezer and let harden completely. We did ours over night to make sure they were good and frozen. You may want to put another layer over saran wrap over the top to avoid freezer burn in your ice cream.

Now it's time to stack. Take each pan and pull on the saran wrap. The frozen cake will pop right out. You will loose some of the cookie crumbs because they didn't stick to the ice cream, that's okay there will be plenty still attached to the ice cream. Stack one on top of the other to create 3 layers. Mmmmm, it's starting to look delicious!

Easy Italian Sausage Pie

Makes: 8 servings

Prep: 20 minutes

Cook: 5 minutes

Bake: 375 for 1 hour 15 minutes

Recipe:

1 lb. Italian Turkey or Chicken Sausage, cut into 1" pieces

5 eggs (we used egg beaters)

10 oz. frozen chopped spinach, drained

2 c. shredded mozzarella cheese

2/3 c. ricotta cheese

1 shallot, finely chopped

1/2 tsp. black pepper

1/2 tsp. garlic powder

1/4 tsp. salt

1 package refrigerated ready-to-roll pie crusts

1 egg beaten lightly with 1 Tbsp. water

Instructions:

Heat oven to 375. Place sausage in a nonstick sillet over medium-high heat and cook 5 minutes until browned on all sides. We actually cook ours on the BBQ.
In a large bowl, combine sausage, 5 eggs, spinach, mozzarella, ricotta, shallot, pepper, garlic powder and salt. Line a 9" pie plate with 1 of the pie crusts. Spoon in the sausage-and-spinach mixture. Top with the remaining pie crust; seal and crimp the edges. Poke a few holes in the center of the pie crust and brush with the egg-water mixture.
Bake at 375 for 1 hour, 15 minutes. Let stand 10 minutes before slicing.

We've made this for dinner twice but discovered via leftovers that it's a great breakfast dish as well.

Week #10 Tip - Stick With It

Well my biggest loser contest has come to an end. Hopefully you learned a little about your strengths and weaknesses when it comes to healthy choices and losing weight. The trick now is to play on your strengths but always be aware of your weaknesses. Don't let the things that constantly bring you down be your focus. For example if you hate exercising, then don't...not yet anyway; focus on food and making other healthy choices; exercise will come in time. We've talked about water, food, exercise, simple changes to an already busy life. If you stick with the changes you've made you will continue to lose weight and be a healthier, happier you!! Good luck with your new choices and your new you!

Gavin's new nickname!! It applies to lots of aspects of Gavin's day-to-day routine. We've documented just a few. He is going, going, going all the time. It's super speed or sleep speed - those are the only 2 speeds he knows.

Our future chef. Loves to help in the kitchen whenever he can - typically his helping is pulling things out of the cupboard and spreading them throughout the house.

Anything becomes a toy. If you don't want him to have it, it better not be in his reach. This bucket has been a boat, a stool, a stage, a cowboy hat - he really does have a great imagination.

The maniac pool boy! Gavin loves the water so much!! Sprinklers, fountains, pools - if there is water he wants to play in it. A couple weeks ago he was jumping and playing with noodles at the pool. One jump came a little too close to the edge of the pool and turned into a face plant into the cement. That cute little smile now just has a little more character with a chunk missing :)

The calm after the storm. He loves to take his toys and kitchen and just throw them all over the living room floor. He will pick up a box of legos and throw it on the floor and then say "uh-oh!" or "oh-no!". Not quite sure why he likes this, but he does all the time. We can't help but laugh. He's learning how to help clean up after himself.

U-Pick peach season is here in Phoenix. Thanks to a recommendation from Samara, we decided to try Vertuccio Farms right down the street from our house. WOW! This hidden gem is right off of Power Road between Warner & Elliot. Who knew it was so close and so awesome! We went to pick peaches and we found our very own local famers market, open 7 days a week! Love this place. They will be seeing a lot more of the Hendricks'.

Stuffed Portabello's

No meat here! It really isn't much to the recipe and it seems hard to believe this would fill you up. But even Jason gets full on just veggies. It really has great flavor!

Saute garlic in olive oil for 3 minutes. Add 1 can of diced tomatoes (with juice), and one small eggplant (diced and peeled). Cook down for about 20 minutes until most of the juice is gone.

Prepare mushrooms: clean, scrape out centers, sprinkle with salt & pepper and drizzle with Balsamic Vinegar. Cook mushrooms: 5 minutes each side on the BBQ/grill. Just to soften them up enough that they are cooked rather than raw.

You need probably 2 bags of fresh spinach (depends on how many mushrooms you are making). 1 bag cooks down to about enough spinach for 4 mushrooms. It looks like a lot of spinach, but once you saute it, it really, really shrinks down.

Assemble your masterpiece. Place mushrooms on a baking sheet top side down. Fill the shroom with the tomato/eggplant mixture, then a layer of sauteed spinach. Top with a slice or two of fresh mozzarella.

Bake in the oven at 350 for 5 minutes, just enough to get the cheese to melt.

We serve with a side of pasta and more veggies. Pasta is tossed with olive oil and parmesan cheese.

Simple and delicious!!

Marathon Man Turns Triathlon Terminator

As you may remember Jason completed a full marathon in January here in Phoenix. With no urgency to complete a full marathon again, he decided to take on a new challenge...a triathlon. He doesn't take on new challenges lightly. Jason doesn't own a bike, but he borrowed one from our friend Jeff and tried to get in as many practice rides as he could. He would go to the pool twice a week and get in a swim. And then of course on all the other days he continued his running. Sunday May 15th he competed in the Seville Sports Club Maxi Sprint Triathlon: 300 yard swim, 15 mile bike, and 2 mile run. Sure it may not seem like much compared to running 26.2 miles...but you try getting in the pool and swimming 300 yards - holy cow!! Then you follow that with a ride and run.

His first triathlon ever and he came out on top - we all knew he would. Jason actually placed first in his age division. FIRST PLACE in his FIRST RACE. What a superstar!! We are all so proud of him. He is an amazing swimmer and really stepped up his pace in the run. He is, of course, now hooked and looking forward to entering many more triathlons in the future.

Next goal - working on that tan!!

He was a little too nice during some portions of the swim; he got caught behind a few female swimmers and didn't push them out of the way...what a gentleman.

Determined and focused. (it was so hot as a spectator, Gavin and Barb got sunburned...forgot the sunscreen)

Week #8 Tip - Accountability

We all know the benefits of exercise, we can't escape the constant reminders. But...how do we get motivated to move? Change in anything we do is challenging, but life would be boring without challenges. I find when I can't motivate myself to find someone to help hold me accountable. Find an accountability partner - a neighbor to go for a walk with, a friend to meet you at the gym, a personal trainer to whip you into shape, a spouse or child to do physical activity with. Someone, somewhere can help hold you accountable and you can do the same for them. There are plenty of mornings that skipping your workout and staying in bed sounds much more appealing - but if you have someone counting on you to be there, you will most likely roll out of bed and stick to your plan...and guaranteed you'll be glad you did.

At our house we are all each other's accountability partners. Gavin keeps us moving all the time!! But even he has days that he wants to watch "Mickey", that's when it's time for us to step up. We offer to go to the park, go outside and play baseball, or go to the pool. It's a win-win for all of us. Whenever we can we try to work out together, it really keeps us motivated, especially when one of the two of us is wanting to sleep a little longer.

Probably the single most motivator for us is races. If you sign up for an athletic event (doesn't have to be running) it really helps keep you focused. You have a goal, and it cost you money. Find a local walk, run, jog, bike, or swim competition - there are tons out there, just Google it! Good Luck!!

Downtown Gilbert is such a great place. It's quaint, unique, small, and just so darn cute. Great place to walk around. We don't get down there much, but will be going more often now. They have a Farmer's Market on Saturday mornings from 7am-11am. We've only caught the tail end of it, but it looks great. We plan on going several times this summer. Right next to the Farmers Market is the water tower and the water fun! Of course we weren't thinking about this so we didn't come prepared with water attire. It didn't stop Gavin. We took off his clothes and let him run wild. He loved it! What a great way to have fun outside even in the AZ heat.

Peach Salad

So simple, so delicious, so refreshing!

Aunt Sue gave us this recipe, but we altered it just a bit for our liking.

3 fresh peaches

Fresh Basil

Juice from 1/2 lemon

Fresh ground pepper

Kosher Salt

Plate and drizzle with EVOO (this is where we put our favorite part in)

Queen Creek Olive Mill is where we buy all of our olive oils. They have a vanilla olive oil that is just a touch sweet and so perfect for salads. It topped this one off just right.

Sue's recipe calls for red onion as well. Not a fan of raw onions so I omitted that and put some fresh blueberries on the side to add some color.

Week #7 Tip - Lymphatic System

Side Note for the Ladies: I recently learned that antiperspirant (not deodorant) has aluminum in it. Articles in the press have warned that antiperspirant with aluminum can cause breast cancer; the aluminum can be harmful as it is absorbed through the skin into the lymph area (near the breast). Before throwing away all of your deodorant note I did a little research and neither the National Cancer Institute or the FDA are aware of any conclusive evidence linking the use of underarm antiperspirants to the development of breast cancer. If you want to play it safe check out some men’s deodorant, many of them do not include aluminum. Or stick to a deodorant only (no antiperspirant), something like “Toms“ or “Adidas Aluminum Free”, they do not include aluminum. Gardening with Grandma

Rocco's Fettuccine Alfredo
8 ounces whole-wheat fettuccine
1 tablespoon butter
3 garlic cloves, minced
2 teaspoons cornstarch
Pinch of ground nutmeg
3/4 cup low-fat, low-sodium chicken broth
3/4 cup grated Parmigiano-Reggiano cheese
3/4 cup 5 percent Greek yogurt
Salt and freshly ground black pepper to taste

Bring a pot of salted water to a boil. Add fettuccine; cook according to package directions. While pasta cooks, melt butter in a large nonstick saute pan over medium heat. Add garlic and cook two minutes. Combine cornstarch and nutmeg in a small bowl; whisk in chicken broth until smooth. Pour into saute pan, raise the heat, and bring sauce to a simmer, whisking occasionally. Whisk in 1/2 cup of the cheese until melted. Remove pan from heat. Whisk in yogurt until smooth. Toss fettuccine with Alfredo sauce. Season with salt and pepper. Top pasta with remaining cheese. Serves four.

Hendricks Variation: We added chicken, broccoli, and mushrooms. This is so, so, so good!! Feels like you're eating the guilt of Fettuccine Alfredo, without the calories and fat. Definitely a Hendricks favorite.

Week #6 Tip - Produce Planning

This weekend go to the grocery store and stock up on produce. Lots of veggies and fruit!! Bring it home and wash it all and then start preparing. Slice cucumbers, tear lettuce, peel carrots, trim grapes, remove stickers and wash apples and pears, core & cut bell peppers. If you have plenty of fruits and vegetables available during the week you'll be more likely to grab a fresh, healthy snack rather than chips, cookies, crackers, or other. Fresh produce can be expensive so buy what is on sale to save money; you'll get a variety each week and might even try some new things. Looking for some real adventure, try a food co-op. Week #5 Tip - Reward Yourself
If you lost weight this week, reward yourself (not with food!). Go purchase something new, something to help with your weight loss goals. A new piece of workout equipment. There are lots of tools out there that are small, easy to store or carry around, and inexpensive. Target actually has a great selection. Most equipment includes a 30-60 minute DVD workout as well. Some ideas: Medicine Ball, Yoga Mat, Weights, Pilates Ring, Resistance Bands, Stability Ball. They're all great ideas and can help you create a quick easy workout at home. Congratulations on sticking to your goals - now go reward yourself!!

Week #4 Tip - Step Outside The Box!

Belong to a gym? Check out their class schedule. Sign up for a class you've never done, but always been curious about. Pilates, Yoga, Kickboxing, Spin...most gyms offer free classes with your membership. Don't belong to a gym, then go for a walk. Pick a route near your house, rain or shine - it's nice to get out and enjoy the fresh air. Start with 20 minutes and increase your time a little each day. Try walking 3 times a week. If you don't have time when you get home to go to a class or for a walk, try utilizing your lunch hour. Physical activity should be part of your weight loss journey, but not to the point you regret it...just do it!

Week #3 - Exercise can be easy, fun, and only take a few minutes

Exercise: the dreaded word many of us hate to hear! Hello!!! You’re in a biggest loser contest, have you watched the show? They exercise! It’s easier said than done when we all have jobs, families, kids, sleep, etc. taking up all of our time. Here is a way to fit in some exercises that won’t take up much time, but if you start now and are disciplined you will see results by the end of the contest. Pick 3 exercises, only 3 (suggestions below). Make this part of your night time routine, right after you brush your teeth, every night! If you haven’t exercised for a long time start with 1 set of each, if you’re up for more do 2 or 3 sets, but not more than 3. Completing 3 sets of 3 basic exercises will take you less than 10 minutes, for most of you less than 5. You probably won’t even work up a sweat but you will be slowly building your muscles. Time to pick your 3!

Squat Thrusts

These are all simple exercises that don’t require equipment, only a floor. If you want other ideas try Google “couch exercises” or “exercises without equipment”. Remember the key is to pick 3 and keep it to 5-10 minutes (otherwise you’ll go back to what you do now…nothing)

Easter 2011

Most toddlers scream at the thought of mommy putting them on the lap of a big white scary looking fur ball. Gavin LOVES the Easter Bunny!! Couldn't get enough of him. We went to two egg hunts, one on Saturday and one on Sunday. The line for kids to see the Easter Bunny was about 25 kids long, Gavin left our side and ran right up to the furry friend. E.B. picked Gavin up and put him on his lap - so much for waiting in line. We snapped a few pictures and quickly left.

We also had a hunt in our backyard for Gavin. He did great, found all the eggs (well at least all of the ones that daddy remember where he hid them). We had a really nice brunch and enjoyed the rest of the day relaxing.

Fettuccine with Mushrooms and Hazelnuts

Cooking Light - Jan/Feb 2011

Very rarely does a "Pasta of the Month" recipe go unnoticed at our house. We use the excuse that it would be a great pre-race recipe...and then we make it no where near a race. This was also featured as a superfast recipe. I would say easily took less than 20 minutes to make, partnered with a fresh veggie - it was a great meal!

Roasted/chopped hazelnuts - slice garlic - pre-sliced mushrooms

Fresh pasta, we bought Buitoni kept in the refrigerated section at our grocery store.

When a recipe calls for fresh herbs, 99% of the time we make a point of buying fresh. It really does make a difference.

YIELD: 4 servings (serving size: about 1 1/2 cups pasta mixture, about 2 tablespoons cheese, and 1 tablespoon hazelnuts)

Ingredients

1 (9-ounce) package refrigerated fresh fettuccine
1 tablespoon butter (we use olive oil)
1/4 cup chopped blanched hazelnuts
1 tablespoon olive oil
4 garlic cloves, thinly sliced
3 (4-ounce) packages presliced exotic mushroom blend
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
2 teaspoons chopped fresh sage
2 ounces Parmigiano-Reggiano cheese, shaved
2 tablespoons finely chopped chives

Preparation

1. Cook the pasta according to package directions, omitting salt and fat. Drain in a colander over a bowl, reserving 3/4 cup cooking liquid.
2. While water for pasta comes to a boil, melt butter in a large nonstick skillet over medium-high heat. Add hazelnuts to pan; sauté for 3 minutes or until toasted and fragrant. Remove from pan with a slotted spoon. Add oil to pan, and swirl to coat. Add garlic and mushrooms to pan; sprinkle with 1/4 teaspoon salt and black pepper. Sauté mushroom mixture for 5 minutes; stir in sage. Add pasta, reserved cooking liquid, and remaining 1/4 teaspoon salt to pan; toss well to combine. Remove from heat; top with cheese, toasted hazelnuts, and chives.

Hazelnuts aren't easy to find and can be very expensive. We went to Sprouts where they sell them in the bulk. For a large handful it was only a few dollars.

Week #2 Tip - MILK DOES A BODY GOOD!

It's so true! We love milk at the Hendricks house. As a matter of fact we're sitting here enjoying our morning milk as we (Gavin & Mommy) play on our computers. Gavin's washing his milk down with a few Cheerios as well. Milk is one of the best muscle foods on the planet, it's true! You can read lots of articles about it, but take our word for it. Add a glass of milk to your diet each day; it's really great to down a small glass of skim milk after a work out. Not a fan of milk? It's okay lots of people aren't. Try chocolate milk, it adds a few more calories - but it can be a fun sweet treat after a hard work out or long day. And if it gets you drinking milk, just do it! Or if you want a real frosty treat, try a protein shake: peanut butter, banana, and chocolate all in a delicious sip....mmmm!

Yes that's the 20 month old drinking java! Smart mom thought, oh one sip and he'll think...ick! "More, more, more" was the phrase I believe he said after his first sip. He truly is a garbage disposal, eats anything.

Asparagus with Balsamic Tomatoes

This recipe was so good, we could eat it every day. Asparagus is in season right now, inexpensive and so good when you start experimenting just a little. This will be a favorite on our dinner table for years to come!! If you click on the link there are several variations listed as well, we have yet to try these but we're guessing they are just as delicious. (Raisin & Pine Nut, Sesame-Ginger Glazed, and Lemon-Tarragon).

Ingredients

1 pound asparagus, trimmed
2 teaspoons extra-virgin olive oil
1 1/2 cups halved grape tomatoes
1/2 teaspoon minced fresh garlic
2 tablespoons balsamic vinegar
1/4 teaspoon salt
3 tablespoons crumbled goat cheese
1/2 teaspoon black pepper

Preparation

1. Cook asparagus in boiling water 2 minutes or until crisp-tender. Drain.
2. Heat olive oil in a large skillet over medium-high heat. Add tomatoes and garlic; cook 5 minutes. Stir in vinegar; cook 3 minutes. Stir in salt. Arrange asparagus on a platter; top with tomato mixture. Sprinkle with cheese and pepper.
Raisin and Pine Nut variation: Omit tomatoes, garlic, vinegar, and goat cheese. Cook 1/3 cup sliced red onion and 2 tablespoons pine nuts in oil for 4 minutes. Add 2 1/2 tablespoons orange juice, 3 tablespoons raisins, and 2 teaspoons honey; cook 2 minutes. Stir in 1/4 teaspoon salt and 1/4 teaspoon orange rind. Spoon over asparagus; sprinkle with pepper. Yield: 4 servings.

Phoenix Golf Tournament

This was the 10th Annual Golf Tournament for the Phoenix branches at PCI/Masthead. Barb happened to be in town this year and was able to volunteer. The pictures are courtesy of Samara Link. Barb volunteered as the greeter (bossing people to the registration table and breakfast burritos), cigar lady, putting contest, and helped with raffle prizes. It was a fun event and a great group of ladies to work with! They put in a lot of hard work to make this happen and it is always a success. The weather was not typical Phoenix sunny, warm conditions - but we survived.

OK so I'm [Barb] in this Biggest Loser Contest with some old friends from Spokane. Congrats to me I lost 2 lbs the first week!! I decided to think of one small change each week to help with my weight loss. If you do too much at once it can often be discouraging and not enjoyable. I think the contest is for 10 weeks. So that's 10 tips/changes I need to make. I decided I would blog about them just in case you get inspired to make some healthy changes in your life.

Week #1 Tip - Drink More Water

ICK!! How many times have you heard that? I hate drinking water!! I would much rather drink...well anything besides water. This week I found a way that keeps me guzzling 72+ ounces a day. MINT. That's right, I add a sprig of mint to my water and it is so cool and refreshing it keeps me wanting more, more, more. Herb at the grocery store can be expensive and Spring has sprung almost all around the country, so...go to your local nursery and buy yourself a mint plant. **tip** you should plant it in it's own pot/barrel. Mint will take over your flower bed, garden, and yard if you don't keep it contained. Trim a piece off each day & add your your water, the mint flavor will last all day long, I even used the same piece 2 days in a row. For a twist on this yummy hint of flavor try adding cucumber, strawberry, or citrus to your water - or any combination of them all. Delicious! Your body will thank you.

Swimming Season Has Begun

Taking pictures with a toddler who is crazy for the pool isn't easy. Jason was able to snap a few on the cell phone before Gavin went plunging into the pool. We did get some video too that we'll try to post soon. Gavin loves, loves, loves the pool. He has absolutely no fear - which is why he has a life jacket on. He would jump in without anyone around if we weren't watching. Should be a fun & very busy summer at the pool.
