Butternut Squash Lasagna
Great dish for making ahead: holidays, guests, arrival of a baby :)
You can prepare and cook it, then all you have to do is heat it up, thank you Giada!
Ingredients
- 1 tablespoon olive oil
- 1 (1 1/2 to 2-pound) butternut squash, peeled, seeded, and cut into 1-inch cubes
- We purchase already cut, cubed, and ready to cook at Costco or Whole Foods
- Salt and freshly ground black pepper
- 1/2 cup water
- 3 amaretti cookies, crumbled
- Also known as Amaretto Cookies, not easy to find - call your grocery store first before driving all around town (like we did)
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 3 1/2 cups whole milk
- We used 2% to cut down on a little of the fat
- Pinch nutmeg
- 3/4 cup (lightly packed) fresh basil leaves
- 12 no-boil lasagna noodles
- 2 1/2 cups shredded whole-milk mozzarella cheese
- 1/3 cup grated Parmesan
