Happy Valentines Day

Some of the cutest Valentines on the planet.  We can't all be together today, but it doesn't mean there is any shortness of love in the Hendricks house.  Special Happy Valentines Day to Daddy!!

Prince Charming

Not much else to say, the shirt says it all.  We headed out for a walk and ran into the neighbor kids.  Gavin was kind enough to share his Goldfish (miracle); he's working on sharing...but not very good at sharing food.  It was a good sharing moment...he even gave her 2!!


The shirt actually has a name tag printed on it that says "Prince Charming"

Liam Week #5

Is there anything better than playing with a newborn?  When they do talk back it's just the cutest little coo coo.  Liam is smiling and coo-ing all the time.  So much fun!!  He even smiles in his sleep, my favorite :)

Scrumptious Sundays


Roast Pork Tenderloin with Plum BBQ Sauce
Cooking Light
The Plum BBQ Sauce is the secret ingredient.  You really can put it on anything...it even made our broccoli taste better.  Easy and delicious!!
Sauce:
  • 2 tablespoons canola oil
  • 1 cup chopped onion
  • 2 garlic cloves, finely chopped
  • 1/4 cup packed brown sugar
  • 1/4 cup rice wine vinegar
  • 1/4 cup ketchup
  • 2 tablespoons lower-sodium soy sauce
  • 2 teaspoons dry mustard
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon crushed red pepper
  • 2 whole cloves
  • 1 1/2 pounds black plums, quartered and pitted
  • 1 star anise
Pork:
  • 2 tablespoons canola oil
  • 2 (1-pound) pork tenderloins, trimmed
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  1. Heat a large saucepan over medium-high heat. Add 2 tablespoons canola oil to pan, and swirl to coat. Add onion and garlic; sauté 5 minutes, stirring constantly. Add sugar and the next 10 ingredients (through star anise); bring to a boil. Reduce heat, and simmer, partially covered, for 30 minutes or until plums break down and sauce thickens, stirring occasionally. Discard cloves and anise.
  2. Preheat oven to 450°.
  3. Heat a large skillet over medium-high heat. Add 2 tablespoons oil to pan; swirl to coat. Sprinkle pork evenly with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Add pork to pan; sauté 7 minutes, turning to brown on all sides.
  4. Transfer pork to a foil-lined jelly-roll pan; coat with 1/2 cup plum sauce. Roast pork at 450° for 15 minutes. Remove pork from oven. Turn pork over; coat with an additional 1/2 cup plum sauce. Roast 10 minutes or until a thermometer inserted in thickest portion of pork registers 155°. Remove from pan; let stand 10 minutes. Slice crosswise. Serve with remaining plum sauce.

2012 Resolutions


It took us all month to figure them out, but here is the Hendricks Family 2012 Resolutions.  Hope you came up with some good ones, and you're sticking with them!!

  • Use all of our vacation days, even if it just means taking a week off at home.  
  • Less work on the weekends; try to limit our work to Mon-Fri.
  • Potty Training!!!  We realized in 2011 this is a family event.
  • Limit cell phone use in the car; this includes, talking, texting, reading e-mails, all of it...even at read lights.  Nothing is that important, and if it is we can pull over.  Our precious cargo is far more important than our cell phones.
  • Barb & Jason date night, at least once a month.
  • Parents & Kids date breakfast, lunch or other, at least once a month.
Not a ton of resolutions, but if we accomplish all of these in 2012 it will be a very good thing!!

Crash & Burn

A picnic at Queen Creek Olive Mill is always a great time at our house.  We took Auntie Sue this time as she has never been.  While we were waiting for our food Gavin wanted to go run through the trees.  He stepped in a hole and did a number on his face.  The pictures don't do it justice.  His hands didn't get out in front of him so he had a face full of dirt and rocks.  Pour kid.  He cried for a minute (if that), then was really concerned about where his goldfish were.  He didn't even want to take a break and go wash out his rock/dirt filled mouth.  

No one can say we don't play hard at our house!  Of course the scab got worse as the days went on.  These pictures look pretty good.
