Scrumptious Sundays

Butternut Squash Lasagna
Great dish for making ahead:  holidays, guests, arrival of a baby :)
You can prepare and cook it, then all you have to do is heat it up, thank you Giada!

Ingredients
  • 1 tablespoon olive oil
  • 1 (1 1/2 to 2-pound) butternut squash, peeled, seeded, and cut into 1-inch cubes
    • We purchase already cut, cubed, and ready to cook at Costco or Whole Foods
  • Salt and freshly ground black pepper
  • 1/2 cup water
  • 3 amaretti cookies, crumbled
    • Also known as Amaretto Cookies, not easy to find - call your grocery store first before driving all around town (like we did)
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 3 1/2 cups whole milk
    • We used 2% to cut down on a little of the fat
  • Pinch nutmeg
  • 3/4 cup (lightly packed) fresh basil leaves
  • 12 no-boil lasagna noodles
  • 2 1/2 cups shredded whole-milk mozzarella cheese
  • 1/3 cup grated Parmesan
